Is it indiferent to use su or sudo, at running a Bitcoin Full Node in Linux, in terms of security?

Is it indiferent to use su or sudo, at running a Bitcoin Full Node in Linux, in terms of security?

I have heard that using sudo is more insecure overall than using su, but, does it affect an encrypted program like a BitcoinCore node? I do not fear an internal attack, but I do fear the external ones.

If the former answer is affirmative, how can I access to the data directory (I have already installed it in the su way)?

I would like to delete the wallet.dat from there, and substitute it with my wallet, but the computer tells me I do not have the permission, were shall I introduce the root pass-phrase to have access to it?

As an extra information, I am using Debian 9 and GNOME.
