How do I send bit coin as a gift to others that do not have bit coin accounts

I would like to give bit coin to family as a gift. They do not have wallets and do not understand bitcoin. Can I set up wallets or accounts for them? How would this work. I'd like to set up something like a "savings" account or college fund for my great nieces and nephews. I would buy bit coin for them and deposit it in their account until their parents started understanding bit coin and know what to do with it.
