How difficult is it to overwrite firmware/software of hardware wallet (e.g. Ledger Nano S)

How difficult is it to overwrite firmware/software of hardware wallet (e.g. Ledger Nano S)

I'm wondering how hard it is to upload a custom firmware/software on a hardware wallet such as Ledger Nano S.

If I'm a distributor of these devices can I tweak the firmware/software such that instead of pseudo-random mnemonic phrase (defined in BIP39) it just generates a mnemonic from a predefined list, then the distributor would have access to user's funds.

Also is there any way to make sure the firmware/software hasn't been tempered with.
